Chops and Chai Cider

INGREDIENTS
- 2 large pork chops, skin on
- 2 tbs olive oil
- ½ onion, roughly chopped
- 2 royal gala apples, 1 cut in to thin wedges and the other left whole
- 1 c apple cider
- ½ c chai addict (or a cup for a more punchy flavour)
- Serve with mash
METHOD
- The chops: Preheat the oven to 200C. Heat 1 tbs olive oil in a frying pan. Season the chops with salt and pepper and sear the skins in the hot pan until crispy. Add to a shallow oven proof dish. In the same pan, fry the chopped onion with the remaining oil until golden brown. Add to the dish with pork along with sliced apples, cider and Chai Addict. Pop it in to the oven for 30 minutes until the pork is cooked.
- Serve: Plate the pork and apples on top of mashed potato and drizzle with the sauce.
