Ingredients:
- 145g unsalted butter
- 1 1/4 cups caster sugar
- 80g Dutch cocoa powder
- 75ml Chai Addict, Chai Harder, or Dirty Chai (we used Chai Addict)
- 1/4 tsp salt
- 1 tsp vanilla essence
- 2 eggs
- 1/2 cup plain flour
- 1 cup walnuts, roughly chopped
Method:
- Preheat your oven to 180°C.
- Line an 8-inch square tin with baking paper.
- Using the double boiler method, place a heatproof bowl over a pot of simmering water.
- Add the butter, sugar, cocoa, Chai Addict concentrate, and salt. Stir occasionally until melted and well combined.
- Remove from heat and let the mixture cool slightly.
- Add the remaining ingredients and stir until smooth.
- Pour the batter into the prepared dish and bake for 25-30 minutes.
- The edges should look dry while the centre remains slightly undercooked. Insert a skewer into the centre—it should come out with a few moist crumbs.
- Serve warm with a scoop of ice cream or a dollop of coconut yoghurt, and of course, a steaming cup of chai.
