Ingredients:
- ½ cup quinoa flour
- ½ cup LSA (linseed, sunflower, almond mix)
- 1 tbsp nut butter
- 1 tsp baking powder
- ¾ cup nut milk
- ¼ cup reduced Chai Addict or Chai Harder concentrate (learn the 'art of reduction' here)
- 2 tbsp maple syrup
- 1 tsp apple cider vinegar
- Pinch of salt
- Coconut oil for cooking
- Berries, banana coins, coconut yoghurt, cacao nibs, to serve
Chai Maple Syrup:
- 3 tbsp maple syrup
- 1 tbsp reduced chai concentrate
Method:
1. Prepare the Batter:
In a large bowl, mix all ingredients except for oil.
2. Cook the Pancakes:
Heat a small amount of coconut oil on a skillet over medium heat. Pour ¼ cup of batter onto the skillet. When the upper side starts bubbling (about 1-2 minutes), flip the pancake and cook the other side. Keep cooked pancakes warm in an oven until all are ready.
3. Make the Chai Maple Syrup:
Mix the maple syrup and chai concentrate together for a delicious topping.
4. Serve and Enjoy:
Serve your pancakes with your favourite toppings and drizzle with chai maple syrup.
