Dirty Chai Cookies

A soft, moorish dirty chai cookies you'll want on the daily.

INGREDIENTS

1 tbsp@organicmountainespresso80g butter
2 cups plain flour
2 shots@chaiaddict_melbmasala chai concentrate
2 eggs3/4 cup brown sugar
1 tbsp@heilalavanillavanilla extract
1 tbsp icing sugar for dusting

METHOD

1. Preheat oven 180C. Line two baking trays with baking paper.
2. Put espresso and butter into a saucepan over medium heat. Stir continuously until butter melts completely. Take off heat when the mixture turns to a nutty brown colour. Set aside to cool.
3. Combine flour and baking powder in a bowl.
4. Combine eggs and brown sugar in a seperate bowl.
5. Add vanilla, espresso mixture, egg mixture and chai to the flour mixture. Stir the dough until well combined and smooth.
6. Using a cookie scoop or mini icecream scoop, spoon mixture onto trays leaving enough room for them to spread.
7. Bake 12 - 15mins, until firm, springy and golden around the edges.
8. Allow to cool for 10mins on the tray before transferring to a wire rack to cool completely.
9. Dust with icing sugar.
