Pancake any day is a bit of a treat but having pancakes on Pancake Day makes it extra special! Tradition says we need to use up flour, eggs and milk to create the thickest, fluffiest pancakes. But we're doing it a little different here at HQ with a version free of dairy or eggs that's light, warming and healthy.So get your favourite flour and nut milk on the ready and pull up your sleeves coz we be makin' chai addict spiced pancake drizzled with chai infused maple syrup.You can also view our how to video on ourYouTubechannel.Servings: 6            Prep Time: 5 min            Cook Time: 10 minsINGREDIENTS½ c quinoa flour½ c LSA1 tbs nut butter1 tsp baking powder¾ c nut milk¼ c reduced chai addict or chai harder (the‘art of reduction’shows you how)2 tbs maple syrup1 tsp apple cider vinegarpinch of saltcoconut oil, for cookingberries, banana coins, coconut yoghurt, cacao nibs, to serveChai Maple Syrup3 tbs maple syrup1 tbs reduced chai concentrateMETHODBatter up! Add all ingredients, except for the coconut oil, in a large bowl and mix together.Cook it: On medium heat, melt a small amount of coconut oil on a skillet then pour ¼ c of batter. Once the upper side is bubbling, about a minute or two, flip over to cook the other side. Keep in a warm oven until all pancakes are cooked.Make it saucy: Simply mix the maple syrup and chai together, ready for serving.Tuck in: Serve your pancakes with your favourite topping, drizzled with chai maple syrup.
