CHAI PEANUT BANANA BREAD
Simple, yet moist Chai Peanut Banana bread you need to be baking on the reg.
VEGAN, DF, & GF
INGREDIENTS
1 c mashed bananas
1/4 c olive oil
1/4 c maple syrup
1/2 c chai addict chai concentrate (or sub 1/2 C almond milk + an extra tsp cinnamon and 1 tsp mixed spice)
1/2 c smooth peanut butter ( I used dark roast for an extra peanutty taste!)
1.5 c self-raising gluten free flour (I used White Wings)
1/8 tsp salt
1 tsp cinnamon
1/4 c roasted peanuts + extra to decorate
1/4 banana to decorate
METHOD
Preheat oven to 180 degrees celsius fan forced.
Add all wet ingredients into a large mixing bowl. Combine the flour, salt and cinnamon in a medium mixing bowl.
Add the dry ingredients into the wet and stir to combine. Fold through the peanuts and spoon into a loaf tin. Add extra peanuts and banana on top of desired.
Bake for about 50 minutes, or until a skewer comes out dry when inserted. Allow to cool before slicing and serving. Enjoy
